In 1/2-cup metal measure or other small flameproof container combine
soy sauce with 2 tablespoons honey and oil, ginger and garlic; cook,
stir frequently, until mixture is warm, about 1 minute. Transfer to
self-sealing plastic bag or medium bowl (not aluminum); add chicken
and turn to coat with marinade. Seal bag or cover bowl and let stand
10 minutes to marinate. In small metal measuring cup heat remaining
2 teaspoons of honey over low heat until melted; set aside. Spray
grill rack with nonstick cooking spray. Transfer chicken to grill
(or rack), reserving marinade; brush with half of the reserved marinade
and cook over hot coals (or in grill) until browned on one side, about
5 minutes. Turn chicken over, brush with remaining marinade, and cook
until other side is browned, about 5 minutes longer. Brush 1 side
of each cutlet with 1/4 teaspoon heated honey and continue cooking
until glazed, 1 to 2 minutes. Turn chicken over; brush each cutlet
with an equal amount of the remaining honey and cook until chicken
