3/4 cup vegetable oil
1/4 cup red wine vinegar
2 tablespoon Grey Poupon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
6 cups mixed lettuce greens
1 cup snow peas -- blanched
1 small red pepper -- cut in strips
1 cup sliced mushrooms
6 chicken breasts -- boneless,
-- skinless
Instructions:
In small bowl, whisk oil, vinegar, mustard, salt and pepper; set aside.
Arrange lettuce, snow peas, red pepper and mushrooms on 6 individual
salad plates; set aside. Grill chicken 6" from heat source for 10
to 15 minutes or until done, turning once. Diagonally slice chicken
breasts and arrange on each salad. Serve with vinaigrette. Source:
