4 chicken breasts -- boneless and
- skinless
1 tablespoon lime juice
2 garlic cloves -- minced
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/8 teaspoon ground red pepper
1 d hot sauce -- (optional)
4 slices non-fat cheese
1 loaf French bread -- cut
- lengthwise in half
lettuce leaves - opt.
sliced tomatoes - opt.
purple onion slices - opt.
4 tablespoon bottled salsa
Instructions:
Prepare outdoor grill for cooking or preheat grill. With meat mallet
or heavy skillet, flatten chicken to 1/4" thickness. In small bowl,
combine lime juice, garlic and seasonings; spread on one side of each
chicken breast. Place chicken on cooking surface of grill over medium
coals or on rack of grill pan; grill 6-8 minutes, turning once. Top
chicken with non-fat cheese slice; continue cooking until cheese softens.
To serve, cut bread into 4 sections. For each sandwich arrange lettuce,
tomato, purple onion, chicken and 1 tablespoon salsa on bottom half
