1 pound chicken thighs -- boneless,
- skinless -- 1 1/2" cubes
2 large green or red peppers -- 1 1/2" squares
1/4 cup margarine -- melted
3 tablespoon Grey Poupon country Dijon or
-- Dijon mustard
1 tablespoon chopped scallions
2 teaspoons lemon juice
1 garlic clove -- minced
Instructions:
Alternately thread chicken cubes and pepper squares onto 4 skewers;
set aside. In small bowl, blend margarine, mustard, scallions, lemon
juice and garlic. Grill kabobs 6 inches from heat source for 15 to
20 minutes or until done, turning and brushing frequently with mustard
sauce.
