4 chicken breasts -- with the bone
***marinade***
1 cup chardonnay
1/4 cup white wine vinegar
1/4 cup brandy
3 garlic cloves -- chopped
1/4 cup olive oil
1/4 cup Dijon mustard
12 sprigs rosemary
1 teaspoon salt
freshly ground pepper
2 tablespoon olive oil
2 tablespoon crushed black pepper
2 tablespoon fresh thyme -- chopped
Instructions:
Combine the wine, vinegar and brandy in a saucepan and cook over high
heat until reduced by half. Let cool. Add the garlic, oil and remaining
ingredients. Pour over chicken breasts and let marinate over night.
Remove chicken from marinade and pat dry. Grill over medium low heat
being careful not to let fire flare up and burn chicken. Grill until
golden, about 10-12 minutes. Serve with an assortment of grilled vegetables,
and enjoy with Chardonnay.
